1. Peppered Ponmo (using Meat Madam Brown Ponmo)
Soft, spicy, chewy, peppered ponmo is one of those snacks people finish before the real food arrives. With our already well-processed brown ponmo, you’ll spend less time struggling to soften and more time enjoying.
Ingredients
500g Meat Madam Brown Ponmo (cut into strips)
3 large tomatoes
3 scotch bonnets (ata rodo)
1 large onion (divided)
1 red bell pepper
1 tsp ginger powder
1 seasoning cube
Salt to taste
2 tbsp palm oil or vegetable oil
Chopped spring onions (optional)
INSTRUTIONS.
1. Wash and boil the ponmo for 10–15 minutes until soft. Drain and set aside.
2. Blend tomatoes, bell pepper, scotch bonnets, and half the onion.
3. Heat oil in a pan, add sliced onions, and fry until fragrant.
4. Pour in the blended pepper mix and fry until it thickens and the oil begins to separate.
5. Season with salt, seasoning cube, and ginger powder.
6. Add the ponmo and stir well to coat. Allow it to simmer for 5 minutes so the flavor enters well.
7. Garnish with spring onions and serve hot.
Perfect with: rice, spaghetti, fried yam, or simply as a snack to be enjoyed on its own.
2. Nkwobi (using Meat Madam Cow Tail)
Nkwobi is the true definition of indulgence — soft, juicy cow tail drenched in a rich sauce of palm oil and topped with utazi. With Meat Madam’s hygienically processed cow tail, you get all the flavor, minus the stress.
INGREDIENTS.
1kg Meat Madam cow tail, cut and cleaned
1 tbsp potash (akanwu), dissolved in 2 tbsp warm water
½ cup palm oil
2 tbsp ground crayfish
2 seasoning cubes
Salt to taste
1 tsp ground pepper
Sliced onions

Utazi leaves (for that signature bittersweet aroma)
1 tsp ehuru (calabash nutmeg), roasted and ground (optional but recommended)
INSTRUCTIONS.
1. Boil the cow tail with salt, cubes, and sliced onions until tender.
2. In a bowl, pour in the palm oil. Add the clear part of the potash water (avoid sediments) and stir continuously until it forms a thick yellow paste.
3. Add ground crayfish, ehuru, and pepper to the palm oil paste. Mix well.
4. Add your boiled cow tail pieces and coat thoroughly with the mixture.
5. Sprinkle in chopped utazi leaves for aroma.
6. Serve warm in a traditional wooden bowl if you have one.

3. Christmas Chicken Salad (using Meat Madam Chicken)
Refreshing, creamy, and very festive — this salad is perfect for sharing at Christmas picnics, family brunches, or potluck gatherings.
INGREDIENTS.
500g Meat Madam Boneless Chicken breast/thigh
1 medium cabbage (shredded)
2 large carrots (grated)
1 large cucumber (sliced)
2 boiled eggs (sliced)
1 cup sweet corn
1 cup mayonnaise
1 tbsp condensed milk (optional for creaminess)
Salt & black pepper to taste
INSTRUCTIONS.
1. Season chicken lightly with salt and pepper. Pan-sear or boil until cooked, then shred or dice.
2. In a large bowl, combine cabbage, carrots, cucumber, sweet corn, eggs, and chicken.
3. In a separate small bowl, mix mayonnaise and condensed milk (or a bit of sugar, if you prefer).
4. Pour mayo dressing over the salad and toss gently.

700g Meat Madam Chicken (cut into thin strips or small chunks)
3–4 tbsp suya spice (yaji)
2 tbsp vegetable oil
1 tsp salt

INSTRUCTIONS.
1. Pat the chicken dry and rub generously with suya spice, salt, and vegetable oil.
2. Arrange on skewers (optional) and allow to marinate for at least 30 minutes.
3. Grill in an oven or air fryer at 180°C for 20–25 minutes, flipping halfway.
