Omi Obe is a rich, traditional Nigerian stew loved for its bold flavors and soft, chewy cuts of roundabout (cow intestine). Perfect with rice, swallow, or alongside your favorite soups like ewedu, it’s a hearty dish that brings warmth to every table. Here’s how you can make it at home with fresh, hygienically processed roundabout from Meat Madam.
Ingredients:
- 2.5kg roundabout (cow intestine) from Meat Madam, washed and parboiled.
- 1 cup palm oil (red oil).
- 1 large onion, diced.
- 7 large tomatoes.
- 4–5 medium red bell peppers (tatashe).
- 2 scotch bonnet peppers (atarodo).
- Seasoning cubes or powder (to taste).
- Salt (to taste).
Preparation Steps:
1️⃣ Prepare the Pepper Mix
Blend your tomatoes, red bell peppers, and scotch bonnet peppers into a smooth paste. Set aside.
2️⃣ Heat the Palm Oil
Place a clean dry pot over medium heat. Pour in your palm oil and allow it to heat up slightly. Be careful not to bleach it, you just want it hot enough to fry.
3️⃣ Sauté the Onions
Add the diced onions to the hot oil. Stir and let it sizzle for a few seconds until fragrant.
4️⃣ Cook the Pepper Base
Pour the blended pepper mix into the pot. Stir well and let it fry for about 10–12 minutes, until the oil begins to separate from the pepper.
5️⃣ Season the Stew
Add your seasoning cubes/powder and salt to taste. Stir to combine.
6️⃣ Add the Roundabout
Put in the washed and parboiled roundabout. Stir well so it soaks up the pepper base.
7️⃣ Simmer to Perfection
Cover the pot and let it cook on medium heat for about 20 minutes. Stir occasionally to prevent burning.
Serving Suggestions:
- Serve hot with white rice.
- Pair with ewedu or any soup of your choice for a wholesome combo.
- Savor it alone with any swallow (eba, amala, semo, fufu) for a filling meal.
