Yesterday afternoon, sitting in my sitting room and scrolling through my phone, I suddenly started craving chicken. The cravings were so strong I couldn't resist it. So I went to my kitchen, opened up the freezer, and took out my freshly frozen chicken laps from meat madam.
I didn't know what exactly I was going to do with it, I just knew I wanted chicken. So I started by de-freezing my chicken, and in less than an hour I had made this delicious meal, ready to eat.
So I thought, why don't I share this recipe with my meat family, I hope you like it!
INGREDIENTS
1 pack of Meat Madam Chicken Laps (2.5kg)
1 Ramekin cup of Honey
1/2 Ramekins Cup of ketchup
5 cloves of Garlic
Fresh Peppers
2 medium Onions
Salt
5 Medium Carrots
2 medium Sweet Potatoes
6 Irish Potatoes
PREPARATION
1.To make themarinade, add fresh pepper, onions, ketchup, garlic, honey and salt into a blender. Blend until very smooth.
2. Chop up the carrots, sweet potatoes an Irish potatoes into nicely shaped cubes and set aside
3. Warm up the chicken to room temperature and peel the skins off. Place the chicken in a bowl, pour the marinade over it and marinate the chicken for 20 minutes. Cover and allow to rest.
4. Line up the oven tray with foil papers, and place the marinated chicken into them. Toss your chopped carrots and potatoes into the same bowl used for marinating the chicken, coating them in the leftover marinade.
5. Spread the chopped potatoes and carrots over the marinated chicken in the oven tray, then bake at 200°C for 20 minutes on the baking setting.
6. After 20 minutes, increase the oven temperature to 250°C and bake for another 10 minutes. This method will leave your chicken roast moist and tender on the inside, crispy brown on the outside.
7. 10 minutes later and your chicken roast is ready! Serve on a plate and enjoy with a refreshing glass of your favourite fruit juice.
