INGREDIENTS (Serves 10 or more):
- 1 pack of Meat Madam Goat Meat Sharing (2.5kg)
- 5 pieces of habanero pepper (adjust for heat preference)
- 4 large or 6 medium tomatoes
- 5 cloves of garlic
- 2 large or 3 medium sized onions
- 5 carrots
- Seasoning: Turmeric, Coriander, Cumin, Allspice
- Salt to taste
PREP METHOD:
1. Rinse your goat meat thoroughly and place in a large pot.
2. Roughly chop your tomatoes, onions, garlic, and habanero peppers.
3. Blend them together coarsely — you want a thick, rustic texture, not a smooth purée.
4. Chop your carrots into large, chunky pieces and set them aside.
COOKING METHOD:
1. Add your chopped goat meat into a clean pot.
2. Pour in the coarsely blended pepper, tomato, garlic, and onion mix.
3. Add the chopped carrots and diced onions.
4. Sprinkle in your spices (turmeric, coriander, cumin, allspice), seasoning and salt to taste.
5. Stir everything together thoroughly to ensure an even blend of flavour.
6. Cover and cook on low heat for more than an hour, allowing the goat meat to slowly absorb the seasoning and become tender.
Voila! you have a pot of rich, aromatic, and spicy goat meat that’s perfect for rice, yam, pasta, or peppersoup.
